Hot Spinach Artichoke Dip

  • 1 10oz. package frozen chopped spinach, thawed
  • 1 cup mayonnaise
  • 1 cup grated parmesan cheese
  • 1 tsp. minced or crushed garlic
  • 1 14oz. can artichoke hearts (quartered and marinated)
  • 1 cup shredded Colby-jack or Monterey Jack & Cheddar blend cheese
  • Fresh ground pepper

Preheat oven to 350 degrees.

Drain the spinach and squeeze well until all moisture is removed. Crumble into large mixing bowl and add all ingredients except the shredded cheese. Mix well.

Spray a 1-quart casserole dish with cooking spray and spoon mixture into dish, spreading evenly. Top with shredded cheese. Cover and bake for 15-20 minutes or until cheese is melted and bubbly.

Serve with toasted bread slices, crackers, thick potato chips, or sturdy vegetable slices (celery, bell peppers, carrots).
