Baking-resistant chocolate, such as chocolate chips, has less cocoa butter than other forms of chocolate, making it harder for the chocolate to melt when exposed to heat.

To add even more to this confusion, Baker's Chocolate, which comes in bars of unsweetened, bittersweet and semisweet forms, is also a popular brand name that is carried by most grocery stores for baking.

Thanks, very interesting and informative article. I use Ghiradelli, Nestle' and Hershey chocolate products simply because they are always high quality, and there is no guess work involved. The products work. Wondering about Mexican chocolate powder I see in my local store, I may try that one of these days. I tried Dutch process chocolate once, but did not care for it. I tend to stick with my three favorites. Thanks again for a really great article, I learned a lot about chocolate!!

You missed Lindt & Sprungli extra dark 85% chocolate. It's fabulous. I went through Ghiradelli's tour, and it is good, too.

What about Merckens Chocolate? They are rated as one of the best chocolate manufacurers....talk about a high end quality chocolate....this is the best of the best!!!!!!!! Merckens brand is owned by ADM (Archer Daniels Midland Company)

Shumaila commented on hershey chocolate which had also been ome of my favorites until i recently read the ingredients on their chocolate bars. They have now added the cheap unhealthy palm kernal oil as has godiva and bakers. Cadbury from the uk have not added it, but their american version is cheaped. Buyer beware and always read labels! !

Another chocolate to try is IKEA`s brand.I liked the dark chocolate, it`s not sweet or bitter. It is also fairly low carb. I am not a chocoholic but you might like.
