Super Oatmeal Pancakes

1 cup milk 3/4 cup quick-cooking rolled oats 3/4 cup oat flour 2 tbsp. flax seed meal 2 tbsp. sugar 2 tsp. baking powder 1/2 tsp. salt 2 egg yolks, beaten 1 tbsp. canola oil 2 egg whites
Heat milk until hot. Stir in oats and let stand for 10 minutes. Combine remaining dry ingredients, then, add oat/milk mixture. Add egg yolks and oil. Beat egg whites until stiff peaks form, then, fold into batter. Pour in scant 1/4 cupfuls onto hot greased griddle and flip after 2 minutes. Cook until golden brown and serve.
