Absolutely fantastic cake! Your guests will have no idea that this cake is sugar free. Instead of adding liquid sweetener you could use 3 extra tbsp. of concentrated unsweetened apple juice.

Ingredients
    2 cups raisins
    3 cups water
    2 eggs
    3 tbsp. liquid sweetener
    3/4 cup vegetable oil
    1 tsp. vanilla extract
    1 tsp. baking soda
    1/2 tsp. salt
    1 1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    2 cups all-purpose flour
    1 cup chopped walnuts
    1 cup unsweetened applesauce
Methods/steps
Preheat oven to 350 degrees. Grease and flour one 10 in. tube pan.
In a saucepan combine raisins with water and cook until the water is absorbed, cool.
Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener. Mix well. Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture and stir until just combined. Mix in raisins and chopped nuts. Pour batter into prepared pan.
Bake at 350 degrees for one hour.
