Scrumptious Cheese Herb Biscuits
These biscuits are quick and easy to make, and very flavorful. These tasty from-scratch biscuits sure beat biscuits from a box or a can!

Ingredients
2 cups whole wheat pastry flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. dried basil
1/2 tsp. dried or finely chopped fresh thyme
1/4 cup cold butter
1/2 lb. (2 cups) cheddar or swiss cheese, grated
3/4 cup milk or buttermilk
Methods/steps
Preheat oven to 350 degrees. In a medium-size bowl, mix together dry ingredients.
Grate the butter. Toss it in with the dry ingredients with a fork. Then toss in the grated cheese. Mix in the milk or buttermilk.
Knead the dough in the bowl until it holds together. If it doesn't hold together, add a little more liquid. Form into 8-10 balls, flatten each ball a little, and place on an ungreased cookie sheet.
Bake for about 25 minutes, or until lightly browned. Serve immediately, while still hot.
Additional Tips
If using fresh basil, double the quantity and be sure it is finely chopped.
