Ingredients

    For Cake:

    2 c. reduced-fat Bisquick 1 egg or egg substitute 2/3 cup skim milk 1 tbsp. lemon juice 4 tbsp. sugar 2 small peaches, diced 1 tsp. cinnamon

    For Topping:

    1/4 cup flour 1/4 cup brown sugar 1/4 pecans, chopped 1 1/2 tbsp. butter 1/4 tsp. cinnamon

Methods/steps

Spray an 8x8 baking pan with cooking spray and set aside. Add lemon juice to skim milk and set aside. In a bowl mix together Bisquick, egg, sugar, and 1 tsp cinnamon. Add milk and stir until everything just comes together. Add peaches and gently stir until they are mixed in. Pour batter into prepared pan. In a small bowl mix together flour, brown sugar, 1/4 tsp cinnamon, butter and pecans. Mix with a fork or your hand until mixture resembles coarse crumbs. Sprinkle on top of batter. Bake in a 400-degree oven for 25 minutes or until done.
