Chicken Fettuccine Alfredo
Use your noodles. There's no reason to be Alfredo this decadent dish. Creamy, dreamy and so simple to make, this phenomenal fettuccine is the ultimate fix when you're short on time and ingredients.
At a glance
Boiling salted water
4 skinless & boneless chicken breasts, cooked and diced
1 cup mushrooms, pre-cooked in microwave
1 c. butter, softened
1/3 to 1/2 c. freshly grated Parmesan cheese
Freshly cracker pepper
Drop fettuccine into water and cook until fettuccine comes to the surface (approximately 2 minutes). Drain and place in a warm bowl in which half the softened butter has been placed. Top with lumps of remaining butter and cheese. Toss lightly (2 minutes) until fettuccine is well coated and a creamy sauce has formed. Add pepper, mushrooms, chicken breast and additional cheese.
