Zucchini Quiche

This gourmet dish is a great way to work in your daily veggie intake with a proper portion of protein. You can dial up your veggie dose by going greens with spinach or diced tomatoes.

Ingredients

  

  • 4 medium zucchini
  • 1 medium onion
  • 2 eggs
  • 4 egg whites
  • 333/1000 cup(s) vegetable oil
  • 1/2 teaspoon(s) oregano
  • 1/2 teaspoon(s) basil
  • 1/2 teaspoon(s) garlic powder
  • 1/4 cup(s) parsley flakes
  • 1 cup(s) pancake mix

Instructions

 

  • Slice zucchini thin (do not peel).
  • Dice onion.
  • Add oregano, basil, garlic powder and parsley flakes; mix well.
  • Beat eggs until lemon colored.
  • Add oil.
  • Add pancake mix.
  • Mix with zucchini.
  • Put into 9-inch pie plate.
  • Bake at 350 degrees F for about 1 hour until brown.
