Tilapia with Mango Salsa

There’s nothing fishy about what makes this entree so great. Perfectly seasoned fish pairs with a delicious, fruity salsa for a taste treat like no other.

Ingredients

  

  • 1 large mango
  • 1 medium tomato
  • 1/2 cup(s) red onion
  • 1 cup(s) canned black beans, rinsed
  • 2 tablespoon(s) fresh cilantro
  • 1 juice of one small lime
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste
  • 8 ounce(s) tilapia fillets (4 oz each)
  • 1 teaspoon(s) cumin
  • 1 tablespoon(s) chili powder
  • 2 teaspoon(s) oregano
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste

Instructions

 

  • Chop mango, tomato, and onions and put in medium sized bowl.
  • Add rinsed black beans, lime juice, cilantro, and salt and pepper.
  • Chill salsa until ready to serve.
  • Mix cumin, chile powder, oregano, and salt and pepper in small dish.
  • Rub spices on fish.
  • In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.
  • Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice.
