
Tasty Chicken Fried Rice
Who needs takeout when you can prepare a batch of this tasty chicken fried rice in the comfort of your own kitchen? If you’re hungry for Asian fare, take this recipe with a grain of rice.
Ingredients
- 1 cup(s) cooked chicken, bite size pieces
- 1 tablespoon(s) Soy sauce
- 1 cup(s) uncooked regular rice
- 1/4 cup(s) vegetable oil
- 2 1/2 cup(s) chicken broth
- 1/2 cup(s) chopped onions
- 1/2 cup(s) water chestnuts, finely diced
- 1/4 cup(s) chopped celery
- 2 eggs, slightly beaten
- 1 cup(s) shredded lettuce
Instructions

Combine chicken and Soy sauce in bowl.

In electric skillet or deep frying pan brown rice in oil stirring frequently.

Reduce heat, add chicken and broth.

Simmer covered 20 minutes or until rice is tender.

Remove cover and stir in onion, water chestnuts and celery.

Cook uncovered over medium heat until liquid is absorbed.

Push mixture to side and put in eggs.

Cook until eggs are almost set then blend into rice mixture.

Stir in lettuce.

Cover and let set 1-2 minutes.

Serve.
