Tasty Chicken Fried Rice

Who needs takeout when you can prepare a batch of this tasty chicken fried rice in the comfort of your own kitchen? If you're hungry for Asian fare, take this recipe with a grain of rice.

Ingredients
  

  • 1 cup(s) cooked chicken, bite size pieces
  • 1 tablespoon(s) Soy sauce
  • 1 cup(s) uncooked regular rice
  • 1/4 cup(s) vegetable oil
  • 2 1/2 cup(s) chicken broth
  • 1/2 cup(s) chopped onions
  • 1/2 cup(s) water chestnuts, finely diced
  • 1/4 cup(s) chopped celery
  • 2 eggs, slightly beaten
  • 1 cup(s) shredded lettuce

Instructions
 

  • Combine chicken and Soy sauce in bowl.
  • In electric skillet or deep frying pan brown rice in oil stirring frequently.
  • Reduce heat, add chicken and broth.
  • Simmer covered 20 minutes or until rice is tender.
  • Remove cover and stir in onion, water chestnuts and celery.
  • Cook uncovered over medium heat until liquid is absorbed.
  • Push mixture to side and put in eggs.
  • Cook until eggs are almost set then blend into rice mixture.
  • Stir in lettuce.
  • Cover and let set 1-2 minutes.
  • Serve.
