Sugarless Cake

Absolutely fantastic cake! Your guests will have no idea that this cake is sugar-free. Instead of adding liquid sweetener you could use 3 extra tbsp. of concentrated unsweetened apple juice.

Ingredients
  

  • 2 cup(s) raisins
  • 24 floz water
  • 2 eggs
  • 9 teaspoon(s) liquid sweetener
  • 3/4 cup(s) vegetable oil
  • 1 teaspoon(s) vanilla extract
  • 1 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1 1/2 teaspoon(s) ground cinnamon
  • 1/2 teaspoon(s) ground nutmeg
  • 2 cup(s) all-purpose flour
  • 1 cup(s) chopped walnuts
  • 1 cup(s) unsweetened applesauce

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease and flour one 10 inch tube pan.
  • In a saucepan combine raisins with water and cook until the water is absorbed, cool.
  • Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener.
  • Mix well.
  • Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture and stir until just combined.
  • Mix in raisins and chopped nuts.
  • Pour batter into prepared pan.
  • Bake at 350 degrees for one hour.
