Sugarless Cake
Absolutely fantastic cake! Your guests will have no idea that this cake is sugar-free. Instead of adding liquid sweetener you could use 3 extra tbsp. of concentrated unsweetened apple juice.
Ingredients
- 2 cup(s) raisins
- 24 floz water
- 2 eggs
- 9 teaspoon(s) liquid sweetener
- 3/4 cup(s) vegetable oil
- 1 teaspoon(s) vanilla extract
- 1 teaspoon(s) baking soda
- 1/2 teaspoon(s) salt
- 1 1/2 teaspoon(s) ground cinnamon
- 1/2 teaspoon(s) ground nutmeg
- 2 cup(s) all-purpose flour
- 1 cup(s) chopped walnuts
- 1 cup(s) unsweetened applesauce
Instructions
- Preheat oven to 350 degrees.
- Grease and flour one 10 inch tube pan.
- In a saucepan combine raisins with water and cook until the water is absorbed, cool.
- Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener.
- Mix well.
- Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture and stir until just combined.
- Mix in raisins and chopped nuts.
- Pour batter into prepared pan.
- Bake at 350 degrees for one hour.
