Sugarless Cake
Absolutely fantastic cake! Your guests will have no idea that this cake is sugar-free. Instead of adding liquid sweetener you could use 3 extra tbsp. of concentrated unsweetened apple juice.

- 2 cup(s) raisins
- 24 floz water
- 2 eggs
- 9 teaspoon(s) liquid sweetener
- 3/4 cup(s) vegetable oil
- 1 teaspoon(s) vanilla extract
- 1 teaspoon(s) baking soda
- 1/2 teaspoon(s) salt
- 1 1/2 teaspoon(s) ground cinnamon
- 1/2 teaspoon(s) ground nutmeg
- 2 cup(s) all-purpose flour
- 1 cup(s) chopped walnuts
- 1 cup(s) unsweetened applesauce
Preheat oven to 350 degrees.
Grease and flour one 10 inch tube pan.
In a saucepan combine raisins with water and cook until the water is absorbed, cool.
Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener.
Mix well.
Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture and stir until just combined.
Mix in raisins and chopped nuts.
Pour batter into prepared pan.
Bake at 350 degrees for one hour.
