Spaghetti Pie

It may sound like a foreign concept, but spaghetti pie is sure to become a staple on your menu. It’s a crowd pleaser for even the pickiest eater.

Ingredients

  

  • 3 ounce(s) spaghetti, cooked al dente
  • 2 tablespoon(s) Parmesan cheese, grated
  • 1 egg, beaten
  • 1/2 teaspoon(s) oregano
  • 33/50 cup(s) ricotta cheese, part skim milk
  • 6 ounce(s) ground beef, extra lean
  • 2 cloves garlic, minced
  • 1/2 cup(s) onion, chopped
  • 2 tablespoon(s) olive oil
  • 1/2 cup(s) chopped red bell pepper
  • 1/2 cup(s) chopped green bell pepper
  • 1/2 cup(s) chopped carrot
  • 1 8 oz can tomatoes
  • 33/50 tablespoon(s) tomato paste
  • 4 ounce(s) shredded Mozzarella cheese

Instructions

 

  • Pat mixture of first 4 ingredients into a 9″ deep dish pie plate sprayed with nonstick cooking spray.
  • Spread with ricotta cheese.
  • Brown ground beef, garlic and onion in olive oil in skillet, stirring frequently.
  • Add bell peppers and carrot.
  • Cook for 2 minutes or until tender.
  • Add tomatoes and tomato paste.
  • Cook until bubbly, stirring often.
  • Spoon over ricotta cheese.
  • Sprinkle with mozzarella cheese.
  • Bake at 350 degrees for 20 minutes or until brown.
  • Let stand for 5 minutes before serving.
