Spaghetti Pie
It may sound like a foreign concept, but spaghetti pie is sure to become a staple on your menu. It's a crowd pleaser for even the pickiest eater.

- 3 ounce(s) spaghetti, cooked al dente
- 2 tablespoon(s) Parmesan cheese, grated
- 1 egg, beaten
- 1/2 teaspoon(s) oregano
- 33/50 cup(s) ricotta cheese, part skim milk
- 6 ounce(s) ground beef, extra lean
- 2 cloves garlic, minced
- 1/2 cup(s) onion, chopped
- 2 tablespoon(s) olive oil
- 1/2 cup(s) chopped red bell pepper
- 1/2 cup(s) chopped green bell pepper
- 1/2 cup(s) chopped carrot
- 1 8 oz can tomatoes
- 33/50 tablespoon(s) tomato paste
- 4 ounce(s) shredded Mozzarella cheese
Pat mixture of first 4 ingredients into a 9" deep dish pie plate sprayed with nonstick cooking spray.
Spread with ricotta cheese.
Brown ground beef, garlic and onion in olive oil in skillet, stirring frequently.
Add bell peppers and carrot.
Cook for 2 minutes or until tender.
Add tomatoes and tomato paste.
Cook until bubbly, stirring often.
Spoon over ricotta cheese.
Sprinkle with mozzarella cheese.
Bake at 350 degrees for 20 minutes or until brown.
Let stand for 5 minutes before serving.
