  • 1 egg
  • 1/2 cup(s) vegetable oil
  • 3/4 cup(s) milk
  • 2 cup(s) wheat flour
  • 333/1000 cup(s) sugar
  • 3 teaspoon(s) baking powder
  • 1 teaspoon(s) salt
  • 1 cup(s) chopped fruit (peaches, apples, prunes)
  • 1/2 cup(s) brown sugar (optional)

Instructions

 

  • Heat oven to 400 degrees.
  • Use muffin cups or grease bottoms of muffin pans.
  • Beat egg.
  • Stir in oil, milk and fruit.
  • Stir in remaining ingredients all at once, just until moistened.
  • Batter will be lumpy.
  • Fill muffin cups 3/4 full.
  • Bake until golden brown, about 20 minutes.
