  • 1 ounce(s) dried porcini mushroom, hydrated
  • 1 tablespoon(s) shallots, fine chop
  • 4 floz brandy
  • 16 tablespoon(s) heavy cream
  • 4 cup(s) cooked fettuccine noodles
  • 33/100 tablespoon(s) Parmesan cheese

Instructions
 

  • Saute pancetta.
  • Add, stirring after each addition, wild mushrooms, nuts, porcinis and shallots.
  • Add brandy and cream.
  • Cook until reduced; add prepared pasta.
  • Toss.
  • Finish with a liberal sprinkle of Parmesan cheese.
