Ingredients
- 6 ounce(s) pancetta
- 2 cup(s) wild mushrooms
- 1/2 cup(s) roasted pignoli nuts
- 1 ounce(s) dried porcini mushroom, hydrated
- 1 tablespoon(s) shallots, fine chop
- 4 floz brandy
- 16 tablespoon(s) heavy cream
- 4 cup(s) cooked fettuccine noodles
- 33/100 tablespoon(s) Parmesan cheese
Instructions
- Saute pancetta.
- Add, stirring after each addition, wild mushrooms, nuts, porcinis and shallots.
- Add brandy and cream.
- Cook until reduced; add prepared pasta.
- Toss.
- Finish with a liberal sprinkle of Parmesan cheese.
