Roasted Garlic Chicken Swirls

Want to try a new poultry dish? Don’t be a chicken. These roasted garlic swirls are chock full of bacon, cheese and spinach. Add a little color to your plate — and your world — with these palatable pinwheels.

Ingredients

  

  • 16 ounce(s) pkg. bacon
  • 1/2 cup(s) minced garlic
  • 4 cup(s) fresh spinach
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste
  • 1 cup(s) shredded Cheddar cheese
  • 12 boneless chicken cutlets, pounded thin

Instructions

 

  • Cook bacon until crisp; remove and place on paper towels.
  • In same pan, mix garlic and onion.
  • Add spinach and cook down.
  • Salt and pepper to taste.
  • Let cool.
  • Combine crumbled bacon, garlic, onion and spinach.
  • Place mixture in bowl; add cheese.
  • Place a spoonful of this mixture in the center of chicken and roll.
  • Secure with toothpick.
  • Place in baking pan.
  • Repeat with remaining ingredients.
  • Bake at 350 degrees for 45 minutes.
  • To serve, slice piece of chicken into five slices.
