Roasted Garlic Chicken Swirls
Want to try a new poultry dish? Don't be a chicken. These roasted garlic swirls are chock full of bacon, cheese and spinach. Add a little color to your plate -- and your world -- with these palatable pinwheels.

- 16 ounce(s) pkg. bacon
- 1/2 cup(s) minced garlic
- 4 cup(s) fresh spinach
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) pepper, to taste
- 1 cup(s) shredded Cheddar cheese
- 12 boneless chicken cutlets, pounded thin
Cook bacon until crisp; remove and place on paper towels.
In same pan, mix garlic and onion.
Add spinach and cook down.
Salt and pepper to taste.
Let cool.
Combine crumbled bacon, garlic, onion and spinach.
Place mixture in bowl; add cheese.
Place a spoonful of this mixture in the center of chicken and roll.
Secure with toothpick.
Place in baking pan.
Repeat with remaining ingredients.
Bake at 350 degrees for 45 minutes.
To serve, slice piece of chicken into five slices.
