
Quick Stewed Cod
The cods must be crazy. You’ll be hard-pressed to find a fish dish that’s as simple and healthy as this one. Serve as a main dish or over a serving of pasta.
Ingredients
- 2 tablespoon(s) extra virgin olive oil
- 1 onions, diced
- 2 cup(s) plum tomatoes, coarsely chopped
- 1 tablespoon(s) capers, drained and minced
- 1 bay leaf
- 2 tablespoon(s) flat leaf parsley, chopped
- 32 ounce(s) cod, fresh, cut into chunks fine sea salt
Instructions

In a large skillet, heat the olive oil over medium heat.

Add the onion and celery and cook until soft.

Stir in the tomatoes, capers, bay leaf, and parsley and simmer, covered, for 3 to 4 minutes.

Add the cod, cover, and cook over “low” heat for about 8 minutes, or until the fish flakes easily with a fork.

Add salt to taste and serve.
