Puree of Carrot & Sweet Potatoes

Carrots and sweet potatoes are two healthy ingredients that come together in one great dish. This puree is absolutely palatable when prepared under these creamy conditions.

Ingredients
  

  • 5 carrots, sliced
  • 6 floz water
  • 1/4 cup(s) butter
  • 3 57/100 cup(s) (1-29-oz.can) sweet potatoes, drained
  • 2 cup(s) (1-16-oz. can) sweet potatoes, drained
  • 1 cup(s) sour cream
  • 3 teaspoon(s) sugar
  • 1 teaspoon(s) grated lemon rind
  • 1/2 teaspoon(s) ground nutmeg
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) ground black pepper
  • 1/8 teaspoon(s) ground red pepper

Instructions
 

  • Microwave carrot and 3/4 cup water in a glass bowl at HIGH 10 to 12 minutes or until tender and drain.
  • Process carrot and butter in a blender until mixture is smooth, stopping to scrape down sides and transfer to a large bowl.
  • Process sweet potatoes until smooth, stopping to scrape down sides and add to carrot mixture.
  • Stir together sweet potato mixture, sour cream, and remaining ingredients.
  • Spoon into a 1 1/2-quart glass dish.
  • Cover and chill up to 2 days; let stand at room temperature 30 minutes.
  • Microwave at HIGH 4 to 5 minutes or until thoroughly heated.
  • Ready in 1 hour.
