Puree of Carrot & Sweet Potatoes
Carrots and sweet potatoes are two healthy ingredients that come together in one great dish. This puree is absolutely palatable when prepared under these creamy conditions.

- 5 carrots, sliced
- 6 floz water
- 1/4 cup(s) butter
- 3 57/100 cup(s) (1-29-oz.can) sweet potatoes, drained
- 2 cup(s) (1-16-oz. can) sweet potatoes, drained
- 1 cup(s) sour cream
- 3 teaspoon(s) sugar
- 1 teaspoon(s) grated lemon rind
- 1/2 teaspoon(s) ground nutmeg
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) ground black pepper
- 1/8 teaspoon(s) ground red pepper
Microwave carrot and 3/4 cup water in a glass bowl at HIGH 10 to 12 minutes or until tender and drain.
Process carrot and butter in a blender until mixture is smooth, stopping to scrape down sides and transfer to a large bowl.
Process sweet potatoes until smooth, stopping to scrape down sides and add to carrot mixture.
Stir together sweet potato mixture, sour cream, and remaining ingredients.
Spoon into a 1 1/2-quart glass dish.
Cover and chill up to 2 days; let stand at room temperature 30 minutes.
Microwave at HIGH 4 to 5 minutes or until thoroughly heated.
Ready in 1 hour.
