Minted Pineapple

A refreshing sauce that can be served with steamed vegetables, fish or meat. Gives a sweet and minty taste to any dish.

Ingredients

  

  • 2 1/2 cup(s) pineapple chunks
  • 1/2 cup(s) vinegar
  • 1 cup(s) granulated sugar
  • 2 tablespoon(s) mint flakes

Instructions

 

  • Drain syrup from pineapple.
  • To the syrup add vinegar, sugar and mint flakes.
  • Stir to dissolve sugar and bring to a boil.
  • Cover and simmer 10 minutes.
  • Remove from heat; keep covered and set aside to cool.
  • Strain to remove mint flakes.
  • Add pineapple chunks.
  • Store in a covered dish or jar in refrigerator.
  • Ready in 25 min.
