Mediterranean Risotto

Ingredients

  

  • 1 cup(s) parboiled risotto
  • 4 floz white wine
  • 1/2 cup(s) tomato sauce
  • 1 cup(s) Chicken or fish stock, if needed
  • 1 tablespoon(s) olive oil
  • 1 tablespoon(s) butter
  • 1/2 small onion, minced
  • 2 cloves garlic, minced
  • 4 whole clams
  • 4 scallops
  • 1/2 cup(s) squid
  • 3 jumbo shrimp
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste

Instructions

 

  • Place in pan parboiled risotto.
  • Add wine and tomato sauce.
  • Simmer, covered, for 20 minutes.
  • Add fish or chicken stock, if needed.
  • Heat olive oil and butter in saute pan.
  • Add onion and garlic; cook until golden brown.
  • Add seafood and salt and pepper to taste; saute just until done.
  • Add seafood mixture to risotto; toss lightly and serve.
