Mediterranean Risotto

- 1 cup(s) parboiled risotto
- 4 floz white wine
- 1/2 cup(s) tomato sauce
- 1 cup(s) Chicken or fish stock, if needed
- 1 tablespoon(s) olive oil
- 1 tablespoon(s) butter
- 1/2 small onion, minced
- 2 cloves garlic, minced
- 4 whole clams
- 4 scallops
- 1/2 cup(s) squid
- 3 jumbo shrimp
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
Place in pan parboiled risotto.
Add wine and tomato sauce.
Simmer, covered, for 20 minutes.
Add fish or chicken stock, if needed.
Heat olive oil and butter in saute pan.
Add onion and garlic; cook until golden brown.
Add seafood and salt and pepper to taste; saute just until done.
Add seafood mixture to risotto; toss lightly and serve.
