Heart Healthy Spaghetti & Mushroom

The next time you're in the mood for Italian, use your noodle and cook up a batch of this heart healthy spaghetti. The fresh mushrooms lend an earthy flavor for a satisfying meal.

Ingredients
  

  • 2 tablespoon(s) olive oil, unsalted
  • 1 cup(s) sliced fresh mushrooms
  • 1/3 cup(s) chopped onion
  • 1 clove garlic, minced
  • 2 cup(s) can no-salt-added tomatoes, chopped
  • 12 tablespoon(s) can no-salt-added tomato paste
  • 4 floz water
  • 3 teaspoon(s) sugar
  • 1/4 teaspoon(s) bay leaves (1 bay leaf)
  • 83/1000 tablespoon(s) basil
  • 1/4 teaspoon(s) oregano
  • 1/8 teaspoon(s) freshly ground black pepper
  • 1 cup(s) pkg. of spaghetti

Instructions
 

  • Melt butter in large non-stick skillet over medium-high heat.
  • Add mushrooms, onion and garlic.
  • Saut until onion is tender.
  • Stir in remaining ingredients except spaghetti.
  • Cover and simmer over low heat 2 hours, stirring occasionally.
  • If sauce appears too thick, add additional water.
  • Remove bay leaf.
  • Cook spaghetti according to package directions, omitting salt.
  • Drain.
  • Pour sauce over spaghetti and serve.
  • Ready in 20 min.
