Heart Healthy Spaghetti & Mushroom
The next time you're in the mood for Italian, use your noodle and cook up a batch of this heart healthy spaghetti. The fresh mushrooms lend an earthy flavor for a satisfying meal.

- 2 tablespoon(s) olive oil, unsalted
- 1 cup(s) sliced fresh mushrooms
- 1/3 cup(s) chopped onion
- 1 clove garlic, minced
- 2 cup(s) can no-salt-added tomatoes, chopped
- 12 tablespoon(s) can no-salt-added tomato paste
- 4 floz water
- 3 teaspoon(s) sugar
- 1/4 teaspoon(s) bay leaves (1 bay leaf)
- 83/1000 tablespoon(s) basil
- 1/4 teaspoon(s) oregano
- 1/8 teaspoon(s) freshly ground black pepper
- 1 cup(s) pkg. of spaghetti
Melt butter in large non-stick skillet over medium-high heat.
Add mushrooms, onion and garlic.
Saut until onion is tender.
Stir in remaining ingredients except spaghetti.
Cover and simmer over low heat 2 hours, stirring occasionally.
If sauce appears too thick, add additional water.
Remove bay leaf.
Cook spaghetti according to package directions, omitting salt.
Drain.
Pour sauce over spaghetti and serve.
Ready in 20 min.
