Fried Matzoh

These matzo patties are reminiscent of potato pancakes and can be served as a side for breakfast, lunch, of dinner. They also make a great snack topped in butter or jam.

Ingredients
  

  • 1 cooking spray
  • 2 teaspoon(s) oil
  • 4 matzos
  • 4 egg whites
  • 1 pinch(es) onion powder, to taste
  • 1/4 teaspoon(s) kosher salt
  • 1/8 teaspoon(s) black pepper

Instructions
 

  • Coat a large nonstick skillet or griddle with cooking spray and add 1/2 tbs of the oil.
  • Heat the skillet over medium-high heat until very hot.
  • Meanwhile, moisten the matzo with cold water and crumble into a bowl.
  • Add the egg whites and seasonings.
  • Spoon half the mixture into the hot skillet or griddle as one large pancake and brown.
  • With a wide spatula, lift the matzo and add another 1/2 tbs of oil.
  • Brown both sides.
  • Repeat with remaining mixture and oil.
