Fried Matzoh
These matzo patties are reminiscent of potato pancakes and can be served as a side for breakfast, lunch, of dinner. They also make a great snack topped in butter or jam.

- 1   cooking spray
- 2 teaspoon(s) oil
- 4   matzos
- 4   egg whites
- 1 pinch(es) onion powder, to taste
- 1/4 teaspoon(s) kosher salt
- 1/8 teaspoon(s) black pepper
- Coat a large nonstick skillet or griddle with cooking spray and add 1/2 tbs of the oil. 
- Heat the skillet over medium-high heat until very hot. 
- Meanwhile, moisten the matzo with cold water and crumble into a bowl. 
- Add the egg whites and seasonings. 
- Spoon half the mixture into the hot skillet or griddle as one large pancake and brown. 
- With a wide spatula, lift the matzo and add another 1/2 tbs of oil. 
- Brown both sides. 
- Repeat with remaining mixture and oil.
