
Egg Pita Breakfast
We pita the fool who passes on this awesomely appetizing egg sandwich. Skip the fast food drive-thru, and opt for this healthy a.m. offering instead.
Ingredients
- 1 whole egg
- 3 egg whites
- 2 tablespoon(s) salsa, divided
- 1/2 green pepper
- 1 slice onion, chopped
- 2 pitas
- 1 slice reduced-fat cheddar cheese
Instructions

In a small mixing bowl, lightly beat egg and egg whites.

Add 1 tbsp salsa, and blend well.

Lightly coat skillet with cooking spray and saute diced bell pepper and onion for 2-3 minutes until softened.

Add the egg mixture and cook with the vegetables stirring occasionally, until set.

Place pita on a plate and spoon egg mixture on top.

Top with cheese and microwave until cheese is melted.

Top with remaining salsa.
