Egg Pita Breakfast

We pita the fool who passes on this awesomely appetizing egg sandwich. Skip the fast food drive-thru, and opt for this healthy a.m. offering instead.

Ingredients
  

  • 1 whole egg
  • 3 egg whites
  • 2 tablespoon(s) salsa, divided
  • 1/2 green pepper
  • 1 slice onion, chopped
  • 2 pitas
  • 1 slice reduced-fat cheddar cheese

Instructions
 

  • In a small mixing bowl, lightly beat egg and egg whites.
  • Add 1 tbsp salsa, and blend well.
  • Lightly coat skillet with cooking spray and saute diced bell pepper and onion for 2-3 minutes until softened.
  • Add the egg mixture and cook with the vegetables stirring occasionally, until set.
  • Place pita on a plate and spoon egg mixture on top.
  • Top with cheese and microwave until cheese is melted.
  • Top with remaining salsa.
  • Ready in 30 min.
