Edamame Shrimp Salad

You’ll go “soy” nuts for this shrimply irresistible, low-fat salad. It’s got plenty of delicious veggies, yummy edamame and tangy flavors like cilantro and lime!

Ingredients

  

  • 1 cup(s) edamame, shelled
  • 16 ounce(s) chopped boiled shrimp
  • 1 93/100 cup(s) cannellini beans, rinsed and drained
  • 1 cup(s) cherry tomatoes, halved
  • 2 tablespoon(s) chopped red onion
  • 4 ounce(s) fresh cilantro, chopped
  • 4 ounce(s) fresh cilantro, chopped
  • 2 63/100 floz fresh lime juice
  • 1 tablespoon(s) olive oil
  • 1/2 teaspoon(s) salt, to taste

Instructions

 

  • Combine edamame, shrimp, beans, tomatoes, and onions in a large bowl.
  • In a separate bowl, combine remaining ingredients and blend.
  • Pour dressing over edamame mixture and toss gently to combine.
  • Cover and chill.
