Crunchy Catfish
Crunch and munch on this tasty catfish entree. Coated in a Parmesan, ranch mixture, you absolutely can’t go wrong when you serve this fish dish to your family.
Ingredients
- 2 tablespoon(s) light ranch dressing
- 2 large egg whites
- 6 tablespoon(s) yellow cornmeal
- 1/4 cup(s) grated Parmesan cheese
- 1/8 cup(s) all-purpose flour
- 1/4 teaspoon(s) ground red pepper
- 1/8 teaspoon(s) salt
- 4 catfish fillets
Instructions

Heat oven to 425 degrees.

Combine the dressing and egg whites in a small bowl and stir well with a whisk.

Combine the cornmeal, Parmesan cheese, flour, pepper and salt in a shallow dish.

Dip fish in egg white mixture, and then dredge in cornmeal mixture.

Place on baking sheet coated with cooking spray.

Bake for about 30 minutes or until lightly browned and fish flakes easily.

Serve with lemon wedges.
