Crunchy Catfish

Crunch and munch on this tasty catfish entree. Coated in a Parmesan, ranch mixture, you absolutely can't go wrong when you serve this fish dish to your family.

Ingredients
  

  • 2 tablespoon(s) light ranch dressing
  • 2 large egg whites
  • 6 tablespoon(s) yellow cornmeal
  • 1/4 cup(s) grated Parmesan cheese
  • 1/8 cup(s) all-purpose flour
  • 1/4 teaspoon(s) ground red pepper
  • 1/8 teaspoon(s) salt
  • 4 catfish fillets

Instructions
 

  • Heat oven to 425 degrees.
  • Combine the dressing and egg whites in a small bowl and stir well with a whisk.
  • Combine the cornmeal, Parmesan cheese, flour, pepper and salt in a shallow dish.
  • Dip fish in egg white mixture, and then dredge in cornmeal mixture.
  • Place on baking sheet coated with cooking spray.
  • Bake for about 30 minutes or until lightly browned and fish flakes easily.
  • Serve with lemon wedges.
  • Ready in 40 min.
