Crockpot Black Bean Soup
This crockpot classic creates a soul-warming stew that’s perfect for those cold winter nights. Set it and forget it – the longer it cooks, the more developed the flavors will become.
Ingredients
- 3 1/2 cup(s) can diced tomatoes, undrained
- 2 3/8 cup(s) black beans, drained and rinsed (19 oz can)
- 2 1/2 cubes vegetable bouillon
- 1 medium onion, chopped
- 3 to 4 garlic cloves, crushed
- 2 cup(s) frozen green beans
- 2 teaspoon(s) ground cumin
- 2 teaspoon(s) ground ginger
- 2 teaspoon(s) curry powder
Instructions

Combine all veggies, beans and spices in crock pot.

Dissolve bouillon cubes in hot water.

Add to pot.

Add additional water or stock if needed.
