
Creamy Sweet Potato Salad
You say potato -- we say sweet! It's time to give this sweet treat a try. A twist from the traditional tater salads, this one uses sweet potatoes.
Ingredients
- 32 ounce(s) sweet potatoes, peeled and cubed
- 1 cup(s) mayonnaise
- 1/2 cup(s) packed brown sugar
- 1 cup(s) chopped walnuts
- 1/2 cup(s) raisins
Instructions
- Place potatoes into a large saucepan, and fill with enough water to cover.
- Bring to a boil, and cook for about 8 minutes, or until tender.
- Drain, and cool slightly.
- In a large bowl, stir together the mayonnaise and brown sugar.
- Stir in the sweet potatoes, walnuts and raisins until evenly coated.
- Chill for at least 1 hour before serving.
- Ready in 1 hour 30 min.
