Cool Avocado Salad
When you’re tired of your traditional lettuce and tomato salad, give your starter a heart-healthy kick of avocado. Purchase your avocado a few days in advance to be sure it’s ripe when it comes time to prepare this dish.
Ingredients
- 1 medium or 2 small avocados
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1 ounce(s) lime juice
- 1/4 cup(s) mayonnaise
- 1/2 cup(s) chopped onion
- 2 cup(s) chopped iceberg lettuce
- 1 cherry tomatoes
Instructions

Peel avocados and cut into 1-inch cubes.

In a salad bowl, mix salt, pepper, limejuice and mayonnaise.

Add avocado and onion; mix slightly.

Add lettuce and toss lightly.

Garnish with tomatoes.
