Cool Avocado Salad

When you're tired of your traditional lettuce and tomato salad, give your starter a heart-healthy kick of avocado. Purchase your avocado a few days in advance to be sure it's ripe when it comes time to prepare this dish.

Ingredients
  

  • 1 medium or 2 small avocados
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste
  • 1 ounce(s) lime juice
  • 1/4 cup(s) mayonnaise
  • 1/2 cup(s) chopped onion
  • 2 cup(s) chopped iceberg lettuce
  • 1 cherry tomatoes

Instructions
 

  • Peel avocados and cut into 1-inch cubes.
  • In a salad bowl, mix salt, pepper, limejuice and mayonnaise.
  • Add avocado and onion; mix slightly.
  • Add lettuce and toss lightly.
  • Garnish with tomatoes.
  • Ready in 15 min.
