Classic Cumin Rice

Cumin seed gives this simple rice side dish a smoky Indian fusion. This side, which also features peppers and onions, goes well with fish, pork, meat, and chicken dishes.

Ingredients
  

  • 333/1000 cup(s) chopped onion
  • 1/4 cup(s) chopped green pepper
  • 1 cup(s) uncooked rice
  • 1 ounce(s) bacon drippings (approximately 2 tbsp)
  • 2 cup(s) boiling beef broth
  • 1 tablespoon(s) Worcestershire sauce
  • 3/4 teaspoon(s) cumin seed

Instructions
 

  • Cook onion, pepper and rice in bacon drippings until rice is golden brown.
  • Use low heat and stir to prevent over-browning.
  • Turn into shallow 2-quart casserole.
  • Add drippings, broth, Worcestershire sauce, salt and cumin; stir well.
  • Cover tightly with lid or foil and bake at 350 degrees for 30 minutes or until rice is tender and liquid is absorbed.
  • Fluff lightly with fork.
  • Ready in 40 min.
