
Chicken With Mushrooms
Chicken with rich mushrooms is a quick and easy, yet nutritional and savory, dish that’s perfect for a weeknight meal. Serve with rice or potatoes.
Ingredients
- 2 teaspoon(s) olive oil
- 3 tablespoon(s) balsamic vinegar
- 2 teaspoon(s) Dijon mustard
- 1 large clove garlic, minced
- 4 4-oz. thin sliced boneless, skinless chicken breasts
- 2 cup(s) mushrooms, sliced
- 333/1000 cup(s) chicken broth, low fat, or water
- 2 teaspoon(s) fresh thyme leaves, minced
Instructions

In a skillet, heat 2 tbs olive oil.

In a medium bowl, mix 3 tbsp of vinegar, the mustard and garlic.

Add chicken and turn to coat.

Transfer chicken and marinade to skillet.

Saute chicken, about 3 minutes on each side.

Add mushrooms cook 2 minutes.

Transfer chicken to a platter and keep warm.

Add broth and fresh thyme.

Cook, stirring occasionally, about 2 minutes longer.

Serve chicken topped with mushrooms.
