Cancun Beef Breakfast
Beef, it's what's for breakfast. This beef and egg casserole will get you going in the morning and keep you full until lunch.
Ingredients
- 1 pound(s) ground beef
- 1 1/4 cup(s) Ro-Tel
- 1 bell pepper chopped
- 1/2 onion, or more if you prefer
- 1 tablespoon(s) chopped garlic
- 3/4 teaspoon(s) cumin
- 4 eggs
- 1 cup(s) shredded Cheddar cheese
Instructions
- Heat large iron skillet and brown the ground beef.
- Drain off fat.
- Add pepper, onion and garlic.
- Cook until the onions are soft.
- Add Rotel and cumin.
- Cook for 2 1/2 minutes, covered.
- In the mixture, make 4 small pools and add 1 egg to each pool.
- Cook for 5 min.
- covered or until eggs are poached well.
- Add cheddar cheese to the top cover and cook 1 min.
- until cheese is melted.
- Ready in 25 min.
