Cancun Beef Breakfast

Beef, it's what's for breakfast. This beef and egg casserole will get you going in the morning and keep you full until lunch.

Ingredients
  

  • 1 pound(s) ground beef
  • 1 1/4 cup(s) Ro-Tel
  • 1 bell pepper chopped
  • 1/2 onion, or more if you prefer
  • 1 tablespoon(s) chopped garlic
  • 3/4 teaspoon(s) cumin
  • 4 eggs
  • 1 cup(s) shredded Cheddar cheese

Instructions
 

  • Heat large iron skillet and brown the ground beef.
  • Drain off fat.
  • Add pepper, onion and garlic.
  • Cook until the onions are soft.
  • Add Rotel and cumin.
  • Cook for 2 1/2 minutes, covered.
  • In the mixture, make 4 small pools and add 1 egg to each pool.
  • Cook for 5 min.
  • covered or until eggs are poached well.
  • Add cheddar cheese to the top cover and cook 1 min.
  • until cheese is melted.
  • Ready in 25 min.
