
Butternut Squash

Ingredients
- 3 cup(s) butternut squash- peeled, seeded and cubed (about 1.5 lb)
- 1 egg, lightly beaten
- 1/2 cup(s) mayonnaise
- 1/2 cup(s) finely chopped onion
- 4 to 6 crushed saltine crackers (.25 cups)
- 2 tablespoon(s) grated Parmesan cheese
- 1 tablespoon(s) butter, melted
- 1 teaspoon(s) brown sugar
- 1 dash(es) salt
- 1 dash(es) pepper
Instructions

Preheat oven to 350 degrees.

Using a large pot, bring the squash to boil.

Reduce to a simmer until squash is soft.

Using a large bowl, mash the softened squash.

Add in the mayonnaise, onion, egg, brown sugar, salt and pepper.

Mix ingredients.

Pour the mixture into a 2 quart baking dish.

Using a medium bowl, mix together crackers, Parmesan and butter.

Sprinkle over the squash mixture.

Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.
