Butternut Squash

Ingredients
  

  • 3 cup(s) butternut squash- peeled, seeded and cubed (about 1.5 lb)
  • 1 egg, lightly beaten
  • 1/2 cup(s) mayonnaise
  • 1/2 cup(s) finely chopped onion
  • 4 to 6 crushed saltine crackers (.25 cups)
  • 2 tablespoon(s) grated Parmesan cheese
  • 1 tablespoon(s) butter, melted
  • 1 teaspoon(s) brown sugar
  • 1 dash(es) salt
  • 1 dash(es) pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Using a large pot, bring the squash to boil.
  • Reduce to a simmer until squash is soft.
  • Using a large bowl, mash the softened squash.
  • Add in the mayonnaise, onion, egg, brown sugar, salt and pepper.
  • Mix ingredients.
  • Pour the mixture into a 2 quart baking dish.
  • Using a medium bowl, mix together crackers, Parmesan and butter.
  • Sprinkle over the squash mixture.
  • Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.
