
Baby Spinach Salad with Blueberries and Walnuts
Go greens, go blue(berries)! This is a super salad that would undoubtedly cause Popeye to swell with pride. Loaded withantioxidants, this delightfully delectable dish works great as a starter or a main meal. Lettuce entice you to give it a try.
Ingredients
- 1 pound(s) small red onion, thinly sliced

- 1/2 cup(s) fresh blueberries
- 1/4 cup(s) cup crumbled feta
- 2 tablespoon(s) olive oil
- 1 tablespoon(s) balsamic vinegar
Instructions
- In a medium bowl, toss together baby spinach, red onion and chopped walnuts.
- Add blueberries and feta cheese.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Drizzle over salad and toss gently to coat.
- Serve immediately.
- Try with added pear or apple slices for an extra sweet treat!.
