Apple Bread Pudding

In the immortal words of Pink Floyd, “if you don’t eat your meat, you can’t have any pudding.” And that would be a crying shame if you missed out on this apple bread pudding.

Ingredients

  

  • 1/4 cup(s) sugar
  • 1 teaspoon(s) ground cinnamon
  • 2 cup(s) lowfat milk
  • 1 cup(s) egg substitute
  • 1 tablespoon(s) brown sugar
  • 1 1/2 teaspoon(s) vanilla extract
  • 8 whole-wheat bread, toasted and cut corner-to-corner
  • 2 large apples, cored & diced
  • 2 cup(s) lowfat vanilla frozen yogurt

Instructions

 

  • Heat oven to 375 degrees.
  • Coat a 9″ square baking dish with nonstick spray.
  • Mix sugar & cinnamon.
  • In a bowl, blender, or food processor whisk or blend milk, egg substitute, brown sugar & vanilla extract.
  • Arrange half the toast in baking dish; sprinkle with half the cinnamon-sugar and apples.
  • Repeat layers.
  • Pour milk mixture over top.
  • Bake uncovered 40-50 minutes until a knife inserted in center comes out clean.
  • Cut in squares; top with scoops of frozen yogurt.
