
Peter’s Finnish Pancakes
These pancakes will take you to the “Finnish” line. They’re much like any other pancakes — which means they’ll satisfy you and all of the other hungry mouths at your table but they have a European flare. Fill them with your favorite jelly spread, roll them and dip in syrup. Everyone wins with this recipe.
Ingredients
- 3 eggs
- 1 1/4 cup(s) milk
- 3/4 cup(s) flour
- 1/2 teaspoon(s) salt
- 2 tablespoon(s) sugar
- 1 tablespoon(s) baking powder
- 2 1/2 tablespoon(s) butter, melted
- 2 tablespoon(s) vegetable oil
Instructions

Mix flour, salt, sugar, and baking powder in one bowl.

Mix eggs and milk in another.

Slowly combine, making sure to not get clumps.

Once smooth, stir in butter and oil.

Heat skillet to medium heat; lightly coat skillet with butter stick.

Using 1/3 Cup measuring cup, pour batter onto skillet and spread to thin even layer.

Once edges brown and bubbles stop and turn.

Cook until edge brown again.

Spread desired toppings and then roll and serve.
