Lamb & Penne in Skillet
Perfect night for pasta! Sauteed lamb in a sauce of oil, tomato juice, salt, pepper, basil, oregano and finally vegetables and pasta! Dinner is served!
Ingredients
- 16 ounce(s) ground lamb
- 16 ounce(s) lamb, sliced
- 1 tablespoon(s) vegetable oil
- 1 clove garlic, crushed
- 3 cup(s) tomato juice
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) ground black pepper
- 4/25 tablespoon(s) crushed dried basil
- 1/2 teaspoon(s) crushed dried oregano
- 1 cup(s) penne pasta
- 1 1/4 cup(s) pkg. frozen mixed vegetables, thawed
Instructions

Heat oil in a large saucepan over medium heat until a drop of water sizzles in the oil.

Add lamb and cook, stirring frequently until no longer pink.

Add onion and garlic; saute for 5 minutes, but do not brown.

Add tomato juice, salt, pepper, basil and oregano; simmer covered for 10 minutes.

Add penne and continue to cook for approximately 10 minutes or until pasta is almost cooked.

Stir in mixed vegetables and simmer for 15 minutes, or until the vegetables are tender-crisp.

Ready in 40 min.
