Lamb & Penne in Skillet

Perfect night for pasta! Sauteed lamb in a sauce of oil, tomato juice, salt, pepper, basil, oregano and finally vegetables and pasta! Dinner is served!

Ingredients
  

  • 16 ounce(s) ground lamb
  • 16 ounce(s) lamb, sliced
  • 1 tablespoon(s) vegetable oil
  • 1 clove garlic, crushed
  • 3 cup(s) tomato juice
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) ground black pepper
  • 4/25 tablespoon(s) crushed dried basil
  • 1/2 teaspoon(s) crushed dried oregano
  • 1 cup(s) penne pasta
  • 1 1/4 cup(s) pkg. frozen mixed vegetables, thawed

Instructions
 

  • Heat oil in a large saucepan over medium heat until a drop of water sizzles in the oil.
  • Add lamb and cook, stirring frequently until no longer pink.
  • Add onion and garlic; saute for 5 minutes, but do not brown.
  • Add tomato juice, salt, pepper, basil and oregano; simmer covered for 10 minutes.
  • Add penne and continue to cook for approximately 10 minutes or until pasta is almost cooked.
  • Stir in mixed vegetables and simmer for 15 minutes, or until the vegetables are tender-crisp.
  • Ready in 40 min.
