Parsley Red Potatoes

Ingredients

  

  • 16 ounce(s) small red potatoes
  • 1 tablespoon(s) olive oil
  • 33/100 tablespoon(s) butter
  • 1 tablespoon(s) chopped fresh parsley
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste

Instructions

 

  • Scrub potatoes and peel off strip around center of each potato.
  • In 2-quart microwavable dish, place potatoes and 1/2-inch water.
  • Cover with lid of dish or plastic wrap, turning back a corner to vent.
  • Microwave on “high” 5 minutes.
  • Rotate dish or turn potatoes; recover and cook 8 minutes longer or until potatoes are fork-tender.
  • Drain potatoes; add oil, butter, parsley, salt and pepper to taste.
  • Transfer to serving bowl.
  • Ready in 20 min.
