- 1 tablespoon(s) olive oil
- 33/100 tablespoon(s) butter
- 1 tablespoon(s) chopped fresh parsley
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) pepper, to taste
Scrub potatoes and peel off strip around center of each potato.
In 2-quart microwavable dish, place potatoes and 1/2-inch water.
Cover with lid of dish or plastic wrap, turning back a corner to vent.
Microwave on "high" 5 minutes.
Rotate dish or turn potatoes; recover and cook 8 minutes longer or until potatoes are fork-tender.
Drain potatoes; add oil, butter, parsley, salt and pepper to taste.
Transfer to serving bowl.
Ready in 20 min.
